Soft and creamy Parmesan and goat's milk cheese balls

    Parmesan cheese, grated
  • 200
    g
    goat's milk cheese
  • 2
    free-range eggs, beaten
  • 1
    Tbs
    Italian parsley, chopped
  • 2
    Tbs
    chives, chopped
  • 5
    ml
    salt, to taste
  • 100
    g
    flour, to dust
  • 1
    egg, beaten
  • 100
    g
    breadcrumbs, to coat
  • 200
    ml
    oil, to deep-fry
  • 60
    g
    grape jam, to serve
 

Method

Mix together cheese, eggs, herbs and salt. Roll into bitesize balls. Roll in flour, dip in beaten egg and roll in breadcrumbs. Heat oil over medium heat and deep-fry balls in batches until golden brown. Drain on a paper towel and eat straight away. Serve them with grape jam.
