Snow eggs

    extra-large eggs, separated
  • salt and white pepper to taste
  • 4
    slices hot buttered toast (white or wholewheat)
  • 4
  • flavour enhancer for sprinkling


1. Beat the egg whites with a good pinch each of salt and white pepper until stiff but not dry. 2. Pile the whites on the slices of toast and make a small indentation on the top of each mound using the back of a spoon. Carefully place an egg yolk in each indentation and top with 1 ml butter. 3. Sprinkle lightly with flavour enhancer and bake in the top of a preheated 220 ºC oven for 10 minutes, or until the whites are starting to colour. Serve immediately.
