Snoek in star anise and orange marinade

  • 65
    ml
    soy sauce
  • finely grated peel of two oranges
  • 30
    ml
    honey
  • 15
    ml
    oil
  • 2
    cloves garlic, crushed
  • 5
    cm
    piece fresh ginger, grated
  • 2
    thick strips lemon peel
  • 1
    whole star anise
  • 15
    ml
    sesame seeds
  • 500
    g
    snoek
  • 2
    sweet potatoes, peeled and sliced into thin wedges
  • coarse salt
  • olive oil
 

Method

Preheat the oven to 200 ºC. Blend all the ingredients for the marinade. Place the fish in a shallow dish and pour the marinade over the fish. Marinate in the fridge for a few hours. Place the sweet potato slices in an oven dish and sprinkle with coarse salt and olive oil. Roast for about 20-30 minutes or until nearly tender. Meanwhile remove the snoek from the marinade and place on top of the sweet potato slices. Roast for a further 15-20 minutes, until the fish is no longer glassy and the sweet potatoes are tender. Serve with a green salad. Serves 3.
