Snoek in star anise and orange marinade

Ingredients (13)

MARINADE
65.00 ml soy sauce
orange — zest only
30.00 ml honey
15.00 ml oil
2.00 garlic — cloves, crushed
5.00 cm fresh ginger — grated
2.00 strips of lemon peel — thick
1.00 star anise — whole
15.00 ml sesame seeds
500.00 g snoek
2.00 sweet potato — peeledand sliced into thin wedges
sea salt
fresh chillies — 573

Method:

Preheat the oven to 200 ºC. Blend all the ingredients for the marinade. Place the fish in a shallow dish and pour the marinade over the fish. Marinate in the fridge for a few hours. Place the sweet potato slices in an oven dish and sprinkle with coarse salt and olive oil. Roast for about 20-30 minutes or until nearly tender. Meanwhile remove the snoek from the marinade and place on top of the sweet potato slices. Roast for a further 15-20 minutes, until the fish is no longer glassy and the sweet potatoes are tender. Serve with a green salad.
