Smothered onion sauce

    ml
    butter
  • 45
    ml
    extra virgin olive oil
  • 2
    kg
    onions, thinly sliced
  • salt and milled black pepper
  • 200
    ml
    dry white wine
 

Method

 
Heat butter and oil, add onions and a little salt. Cover and simmer over low heat for 1 hour, or until onions are very soft. Remove lid, increase heat and cook until golden and liquid has boiled away. Add milled black pepper to taste and wine, increase heat and cook for 5 minutes. Serve with spaghetti.
