Smoked haddock pancakes

    large (or 8 small) ready-made pancakes
  • 225
    g
    smoked haddock
  • SAUCE
  • 25
    g
    butter
  • 25
    g
    wholewheat flour
  • 300
    ml
    milk
  • 30
    ml
    cream
  • salt and freshly ground black pepper
  • 5
    ml
    hot English mustard
  • 15
    ml
    grated mature Cheddar
 

Method

Warm the pancakes. Poach the haddock in a little water, then remove skin and flake. Keep warm. SAUCE: heat the butter in a saucepan and add the flour. add milk gradually, stirring continuously. Once it has thickened add the cream, seasoning and mustard. allow to simmer for 2 minutes. Mix half the sauce with the fish and use this mixture to fill the pancakes. Roll up and lay the pancakes side by side in a greased ovenproof dish. Pour the remaining sauce over the pancakes, sprinkle with cheese and bake in preheated oven for 15-20 minutes until cheese is golden. Serves: 4 Preparation time: 15 minutes Cooking time: 15-20 minutes Oven temperature: 200 ºC
