Smoked angelfish salad

    leaves each, butter lettuce and red lettuce
  • 250

    smoked angelfish, flaked
  • 100
    g
    fresh button mushrooms, sliced
  • 410

    litchis, drained (reserve the juice)
  • 5
    stalks celery, sliced
  • a few radishes (stems removed) washed
  • toasted sunflower seeds
  • SALAD DRESSING
  • 100
    ml
    buttermilk or natural yoghurt
  • 100
    ml
    sour cream
  • 25
    ml
    mayonnaise
  • pinch mustard powder
  • 50
    ml
    reserved litchi juice
  • freshly ground black pepper
 

Method

 
Arrange the lettuce leaves on a pretty platter. Arrange the angelfish, mushrooms, litchis, celery and radishes on top and sprinkle with sunflower seeds. Combine all ingredients for the salad dressing. Chill and pour over the salad just before serving or serve separately in a sauceboat. Serves 8-10.
