Simple lemon and herb chicken

    chicken quarters

    big cloves garlic, unpeeled
  • 2
    onions, unpeeled and quartered
  • 4
    potatoes, unpeeled and cut into wedges (optional)

    lemon, halved
  • ml
    olive oil
  • salt and milled pepper
  • 1
    large handful basil or Italian parsley, roughly chopped
  • 250
    white wine or chicken stock


Place the chicken, garlic, onions and potatoes in a large roasting pan. Squeeze over lemon juice and toss in the lemon halves afterwards. Drizzle with olive oil and season well. Roast in a preheated 200 ºC oven for 30 minutes. Scatter fresh herbs over the top, add wine and roast for a further 10 to 15 minutes. Serve chicken with couscous or wilted spinach, and lots of pan juices. Per portion: 2 734 kJ; 40 g carbohydrate; 48 g protein; 36 g fat
