Sesame-flavoured egg-fried rice with prawns

    sesame oil
  • 2
    eggs
  • 10
    ml
    peanut oil
  • 1
    bunch spring onions, cut on the slant
  • 6
    queen prawns (if you can't find queen prawns, use any size, but peel them first)
  • 750
    ml
    rice (jasmine or basmati rice works best for this dish)
  • salt and milled black pepper
 

Method

 
Combine sesame oil with eggs and beat lightly.
Heat a wok or heavy-based frying pan until hot.
Add peanut oil and stir-fry spring onions for two minutes.
Add eggs and stir-fry for one minute.
Add prawns and cook a further minute.
Add rice and stir-fry for five minutes, stirring continuously. Season and serve hot with soya sauce on the side.
