Put the mince in a large bowl, add chopped onions, garlic, ginger, chillies and fresh coriander.Mix together ingredients for
the dry masala and add to mince; mix in thoroughly.Take a large handful and form it into a ball.
Line a baking tray with foil and arrange balls on it. Cook under a moderately hot grill, turning occasionally until brown.
Shread on a skewer alternating with baby spinach leaves, and serve on a bed of lettuce.
