  • 30
    apricots
  • SYRUP
  • 750
    ml
    water
  • 250
    g
    sugar
  • 1
    vanilla pod
  • 2
    ml
    almond essence
  • 2
    bay leaves
  • 2
    cinnamon sticks
 

Method

 
SYRUP: Bring all ingredients to boil. Gently lower whole fruits, one by one, into syrup. Cover, turn down heat and simmer until fruits have softened. Remove and allow to cool. Refrigerate in saucepan in which they were cooked. When cold, spoon out into a bowl.
