Seared ostrich with plum sauce

Ingredients (8)

6-8 ostrich fillet
6 plums
125 ml stock — beef
125 ml wine — red
1 Tbs brown sugar — to taste
1 rocket
1-2 Tbs vegetable oil — or canola oil
1 star anise

Method:

For the plum sauce:
Peel the plums and chop roughly (de-pip them as well).
Place in a pot with the stock, star anise, wine and sugar.
Reduce the sauce for about 20 mins.
Season to taste.
Strain the sauce. Reduce a little longer in the pot to the desired thickness.
Ostrich fillets:
Season the ostrich fillets and sear in a hot pan in a little vegetable or canola oil.
Cook to you liking but it is suggested to go medium rare (about 5 minutes each side).
Let them rest for 10  minutes and slice thinly.
Arrange the rocket on a platter.
Place the ostrich on top of the rocket and drizzle over the sauce.
