Seafood stir-fry with pasta

    uncooked shell noodles

    cloves garlic, crushed

    whole tomatoes, finely chopped

    Nestlé Ideal Evaporated Milk

    chilli sauce (optional)

    frozen prawns
  • 250

    frozen shrimps
  • 400

    frozen calamari
  • 500

    cooked white fish, cubed
  • 225
    g
    mussels, well drained
  • 2
    juice and rind of lemons
  • nutmeg
  • salt and freshly ground black pepper to taste
  • chopped fresh parsley
 

Method

 
Cook the shell noodles in rapidly boiling salted water until soft. Drain well and set aside. Melt the butter in a skottel braai, wok or in a large frying pan and sauté the garlic until soft. Add the tomatoes, evaporated milk and chilli sauce and simmer until a thick sauce forms. Pour boiling water over the prawns, shrimps and calamari. Leave for about a minute until completely defrosted. Drain well. Add the prawns, shrimps, calamari, white fish, mussels and noodles to the sauce. Heat through, stirring continuously, but do not overheat or the seafood will be tough. Season with the lemon juice and rind, a pinch of nutmeg, and salt and black pepper to taste. Serve immediately. Serves 8.
