Seafood pancakes

    onion, finely chopped
  • 2
    garlic cloves, crushed
  • butter and oil for frying
  • 100

    shrimps (shelled)
  • 100

    firm white fish, cubed
  • 2
    crab sticks
  • 30
    ml
    cake flour
  • 180
    ml
    milk
  • 60
    ml
    cream
  • salt and freshly ground black pepper
  • fresh lemon juice
  • 8
    prepared small pancakes
  • 120
    ml
    garlic butter, melted
  • lemon wedges for serving
 

Method

 
Sauté the onion and garlic slowly in a mixture of butter and oil until translucent.
Add the seafood and fry until just done.
Sprinkle with the cake flour, stir through and add the milk and cream.
Season with salt and black pepper.
Simmer until thickened, stirring continuously.
Season with lemon juice.
Spoon a little of the filling onto each pancake, fold and pour over 15 ml melted garlic butter.
Serve immediately with lemon wedges.
