Seafood and pasta salad

Ingredients

  • 250
    g
    pasta shells
  • freshly ground black pepper
  • 1
    juice of a lemon
  • 30
    ml
    basil pesto
  • 8
    sun-dried tomatoes, drained from oil and chopped
  • 30

    capers
  • 300
    g
    mixed seafood (prawns, calamari, mussels), steamed
  • 45
    ml
    olive oil
  • 30
    ml
    fresh basil leaves
 

Method

10 min
 
Cook pasta in a large pan of boiling salted water until al dente. Drain, rinse with cold water and then place in a large bowl. Season generously with freshly ground black pepper. Squeeze over the lemon juice and add pesto, sun-dried tomatoes, capers, seafood, olive oil and basil leaves.
