    cake flour

    milk

    cheddar cheese, grated

    Parmesan cheese
  • 5
    extra-large eggs, separated
  • 10
    ml
    mustard
  • 4
    ml
    Salt and black pepper to taste

Step 1:
Pre-heat oven to 200° C .Grease a soufflé dish. Melt butte r in a medium pan, stir in flour until smooth and cook for 1 minute. Remove from the stand whisk in warmed milk. Bring to the boil, still whisking. Remove mixture from heat.

Step 2: Add cheddar and Parmesan cheeses. Beat in egg yolks, mustard and seasonings.

Step 3: Beat egg whites in a bowl until they form stiff peaks. Using a spatula, gently fold into warm sauce until evenly incorporated.

Step 4: Spoon into a soufflé dish and place in a baking pan of hot water. Bake for 15-20 minutes, or until well risen and cooked through. Serve immediately.
