    butter or margarine
  • 4
    rashers lean bacon, chopped
  • 8
    fresh button mushrooms, sliced
  • 1
    spring onion, chopped
  • 1
    green pepper, seeded and finely chopped
  • 12
    extra-;large eggs, whisked
  • salt and ground black pepper
 

Method

 
Melt the butter and sauté; the bacon until done. Add the mushrooms, spring onion and green pepper and sauté; until done. Pour the eggs over the vegetables, season generously and stir until the egg mixture has just set. Serve immediately with hot toast, cheese and tomato slices.
