Scone wheels

    cake flour
  • 15
    ml
    baking powder
  • 3
    ml
    salt
  • 30
    ml
    sugar
  • 50
    ml
    butter
  • 1
    egg
  • 200
    ml
    water
  • 100
    ml
    melted butter
  • 125
    ml
    fruitcake mix (with syrup)
  • ground cinnamon
 

Method

Grease a flat dish with margarine. Sift the cake flour, baking powder and salt together. Add the sugar and rub in the butter with your fingertips. Beat the egg and water together and fold into the flour mixture with a spatula until just blended. Roll out on a floured surface until about 5-7 mm thick. Mix the rest of the ingredients together and spread over the dough layer. Roll up as for a Swiss roll, cut into 15 slices, each about 1 cm thick. Place five slices in the greased dish at a time and place on an upturned saucer. Microwave for 4 minutes on 100 per cent power or until the scones are done. Repeat with the remaining slices. Makes about 15 wheels.
