    rashers bacon, coarsely chopped

    onion, chopped

    oil
  • 100

    cheese
  • 750
    ml
    cooked pumpkin, cut into pieces
  • 3
    eggs
  • 100
    ml
    milk
  • salt and black pepper to taste
 

Method

Preheat the oven to 180 ºC (350 ºF). Grease a medium-sized oven dish. Fry the bacon until done. Remove from the pan. Sauté the onion in the pan fat and oil until soft. Add to the cooked pumpkin with the cheese and bacon and turn into the prepared dish. Beat the eggs and milk together, season to taste with salt and black pepper and pour over the pumpkin mixture. Bake for about 30 minutes or until set. Serves 4.
