    boiling water
  • 25

    butter
  • 120

    cake flour
  • 3
    extra-large eggs
  • 10

    baking powder
  • 250
    ml
    ham, diced
  • 4
    anchovy fillets, chopped
  • 50
    g
    cheddar cheese, grated
  • 50
    g
    slivered almonds
  • oil for deep-frying
 

Method

 
Place the boiling water and butter in a stainless steel saucepan and bring to the boil. Sift the cake flour and add to the boiling liquid. Stir rapidly until the mixture forms a stiff ball and no longer adheres to the sides and bottom of the saucepan. Remove from the stove and beat for one minute. Cool for 5 minutes. Add the eggs one at a time, beating well after each addition. Add the baking powder and beat well. Add the ham, anchovy, cheese and almonds and blend well. The mixture will be fairly stiff. Drop teaspoonfuls of the batter into the heated oil and fry until brown. Drain on kitchen towelling.
