Ingredients

    ml
    crushed garlic
  • 30
    ml
    red chillies, finely chopped
  • 60

    lemon juice
  • 5
    ml
    cumin seeds
  • 60
    ml
    oil
  • 1
    medium-sized chicken, cut into portions
  • PASTE
  • 125
    ml
    tomato purée
  • 15
    ml
    peri-peri sauce
  • 30
    ml
    butter
  • 125
    ml
    fresh cream
 

Method

Mix the garlic, chillies, lemon juice, cumin seeds and oil together and spread over the chicken pieces.
Set aside to marinate for at least 20 minutes.
Cook in a saucepan over a medium heat until tender and cooked through.
To make the paste, boil all the paste ingredients in a saucepan over a medium heat for 10 to 15 minutes.
Spread the paste onto the chicken pieces and allow to simmer for 10 minutes.
Season to taste.
