Savoury bread (and no-butter) pudding

Ingredients

    cup
    PnP low fat milk
  • 2
    extra large PnP eggs, beaten
  • 1
    pinch salt and ground pepper
  • 1
    half baguette, sliced
  • 1
    bunch spring onion, chopped
  • 200
    g
    smoked chicken, or smoked ham
  • 1
    packet baby spinach leaves, blanched and chopped
  • 1
    bunch PnP asparagus spears, chopped
  • 2
    Tbs
    parsley
  • 125
    ml
    grated parmesan cheese
 

Method

Preheat oven to 180°C

Beat milk and eggs together, season and set aside

Toss remaining ingredients together in a large ovenproof dish and scatter over half the parmesan

Pour over egg mixture, top with remaining parmesan and bake for 20-25 minutes or until egg has set

Serve with a green salad
