    brown rice flour
  • 85

    soya flour (or chickpea flour)
  • 8

    bicarbonate of soda
  • 5

    dried origanum
  • 2
    ml
    ground cumin
  • 5
    ml
    ground coriander
  • 250
    ml
    unsweetened apple juice
  • 1
    large onion, chopped
  • 65

    sunflower oil
  • 45

    lemon juice
  • 30
    ml
    tahini paste (or ground sesame seeds)
  • 15
    ml
    honey
  • 2
    large eggs
  • 30
    ml
    toasted sesame and sunflower seeds
 

Method

35 minutes
 
Combine the flours, bicarb, origanum and spices together in a large bowl. Place the remaining ingredients, except the sesame and sunflower seeds, into a food processor and blend until smooth. Stir into the dry ingredients until just combined. Don't overmix. Pour into a greased 20 cm square baking tin and sprinkle with the toasted seeds. Bake in preheated 160 ºC oven for 35 minutes, or until a skewer inserted into the centre, comes out clean. Allow to cool slightly before slicing. Makes 1 x 20 cm square loaf.
