Whisk the cream until soft peaks form. Add the castor sugar and whip until stiff.Whisk the cream cheese in a separate bowl until just softened and smooth. Fold the cream into the cream cheese along with the vanilla essence.
Crush the biscuits finely or process in a food processor.Spoon a layer of biscuit crumbs into six or eight glasses or small glass bowls. Top with some of the cream-cheese mixture then some sliced strawberries. Continue layering until the glasses are filled. Refrigerate until ready to serve.To Make One Large Cheesecake:Mix about 100ml melted butter with the biscuit crumbs and press into a baking tin or pie plate. Dissolve 20ml gelatine in 50ml water. Melt in the microwave and cool slightly. Stir some of the cream-cheese mixture into the gelatine, then stir it back into the cream-cheese mixture. Pour over the biscuit base and leave to set.
