Salsa soup

    large ripe tomatoes, chopped

    bunches spring onions, chopped
  • 1
    each red and green sweet peppers, seeded and finely chopped

    fresh coriander, chopped (use more if desired)

    minced chilli
  • 2
    ml
    sugar
  • 30
    ml
    olive oil
  • 1
    small lemon or lime, juice
  • 125
    ml
    tomato juice
  • 375
    ml
    chicken stock
  • salt and milled pepper to taste
 

Method

 
Mix all ingredients together and chill for at least 30 minutes to allow flavours to develop. Adjust seasoning to taste. Serve on its own with crusty bread or with side dishes of sweetcorn kernels, sour cream, mashed avocado and tortilla strips.
