Salmon wrapped peaches

    red chilli, deseeded and chopped
  • 65
    olive oil
  • 3
    peaches, cut into 4 wedges
  • 12
    slices of smoked salmon
  • 2
    balls mozzarella cheese
  • Rocket


1. Mix the chilli with olive oil and set aside.
2. Take a peach wedge and a mozzarella chunk, wrap a slice of salmon around the two; or place the salmon and mozzarella on top of the stoned peach.
3. Place peach parcels on a serving platter and drizzle with chilli oil just before serving.
