Salmon kebabs

    Moroccan spice rub

    salmon steaks, skinned and cubed
  • 6
    courgettes, cut into strips
  • 1
    red pepper, seeded and cubed
  • 1
    lemon, the juice

Mix the olive oil and spice rub and pour over the fish cubes. Toss to coat.
Cut the courgettes into strips using a vegetable peeler.
Simmer in boiling water for one minute, then drain well.
Place a red pepper cube onto a kebab stick, then weave the strips of courgette in between the fish cubes and thread onto the kebab stick.
Finish each kebab stick with a sweet pepper cube.
Brush the kebabs with the extra olive oil and grill over medium coals on the braai or in a grill pan until the fish is cooked through.
Drizzle with lemon juice and serve with tossed salad.
