Salmon goujons

Ingredients (6)

4 bread — low-GI, sliced
1 tsp paprika
freshly ground black pepper
1/4 cup mayonnaise — reduced-fat
1 Tbs lemon juice
400 g salmon — fillet, sliced

Method:

Preheat
the oven to 180°C.

Dry
out the bread slices in the oven.

Pulse
in a blender along with paprika and seasoning or crush to form fine crumbs.
Transfer to a shallow bowl or plate.

Stir the
mayonnaise and lemon juice together.

Brush
the fish strips, one at a time, with the mayo mixture and then dip into
breadcrumbs. Shake to remove excess
crumbs.

Place
on a baking tray lightly coated with cooking spray.

Bake
for 10 to 15 minutes until golden brown and cooked through.

Serve
with steamed broccoli, carrot sticks and a crisp green side salad.

Delicious things to add:

· Add a variety of spices or
herbs or your favourite dry rub for an even tastier crumb.

. Lightly whisked egg whites
can be used in place of the mayonnaise, but the dish won’t be quite as
flavoursome.

· Strips of chicken breast or
any firm white fish are also perfect for this recipe.
