250.00 g salmon — smoked
750.00 g potatoes — mashed
2.00 eggs — medium
15.00 ml creamed horseradish
30.00 ml fresh parsley — chopped
0.00 salt
0.00 black pepper — freshly ground
0.00 oil — for frying
0.00 caviar — mock, to serve

Method:

Mix all ingredients except oil and mock caviar. Shape mixture into 6 cakes and chill for 10 minutes. In a large frying pan, heat oil until hot. Fry fishcakes for 3-4 minutes on each side, or until golden brown. Top with mock caviar and serve with steamed fresh asparagus.
Serves 6.
