Ingredients (8)

50.00 g butter — softened
fresh basil — chopped
30.00 ml peanuts — ground
30.00 ml parmesan cheese — grated
1.00 garlic — cloves, crushed
800.00 g salmon
45.00 ml oil
salt and freshly ground black pepper

Method:

1. To make pesto butter, stir butter, basil, peanuts, Parmesan cheese and garlic together. Shape into a roll using cling film. If butter is too soft to shape, refrigerate until firmer.
2. Place butter in the fridge for at least 1 to 2 hours before slicing.
3. Brush salmon cutlets with oil, season with salt and pepper and grill for 3 to 4 minutes on each side. Serve with pesto butter.
