Salmon cutlets with pesto

    g
    softened butter
  • a few finely chopped basil leaves
  • 30
    ml
    ground or finely chopped peanuts
  • 30
    ml
    grated Parmesan cheese
  • 1
    clove garlic, crushed
  • 800
    g
    salmon
  • 45
    ml
    oil
  • salt and pepper
 

Method

 
1. To make pesto butter, stir butter, basil, peanuts, Parmesan cheese and garlic together. Shape into a roll using cling film. If butter is too soft to shape, refrigerate until firmer. 2. Place butter in the fridge for at least 1 to 2 hours before slicing. 3. Brush salmon cutlets with oil, season with salt and pepper and grill for 3 to 4 minutes on each side. Serve with pesto butter.
