Salmon, cucumber and avocado sushi salad

    English cucumber, cut into long, thin shavings

    daikon (white radish), cut into long shavings
  • 30
    ml
    lime juice
  • 30
    ml
    mirin (rice vinegar)
  • 5
    ml
    minced fresh chilli
  • 5
    ml
    sugar
  • 250
    g
    fresh salmon, diced
  • 1
    avocado, peeled, stoned and diced
  • 40
    ml
    pickled ginger
  • seaweed, cut into very thin strips
  • black sesame seeds for garnishing
  • mint leaves for garnishing
 

Method

 
Toss cucumber and daikon with lime juice, mirin, chilli and sugar. Divide between 4 bowls. Top with salmon, avocado, pickled ginger and seaweed. Garnish with sesame seeds and mint leaves and serve.
