Russian risotto

    onions, sliced
  • 3
    cloves garlic, crushed
  • oil
  • 1
    large green pepper, seeded and sliced
  • 4
    stalks celery, sliced into rings
  • 2
    large carrots, scraped and sliced into thin rings or strips
  • 4
    Russian sausages, sliced
  • 1
    cooked white or yellow rice
  • salt and pepper to taste


Sauté the onion and garlic in a little oil till soft. Add the green pepper, celery and carrot and stir-fry for 5 minutes or till the vegetables are just soft but still slightly crisp. Remove from the pan and fry the Russian sausages in the pan till done, adding more oil if necessary. Add the cooked rice and vegetable mixture. Mix everything together and season with salt and pepper to taste. Heat till warmed through and serve immediately. Serves 4.
