Rooibos vinaigrette

    ml
    white wine vinegar
  • 10
    ml
    rooibos tea leaves
  • 120
    ml
    sunflower oil
  • 15
    ml
    flat-leaf parsley, snipped
 

Method

Bring 45ml white wine vinegar to the boil in a small saucepan.
Add 10ml rooibos tea leaves, remove from the heat, cover and leave to cool for 10 minutes. Strain, then whisk in 120ml sunflower oil and 15ml snipped flat-leaf parsley.
