Roly poly pudding with fruit and honey

Method

 
Preheat the oven to 190 °C (375 °F) and spray a 30 x 22 x 5 cm ovenproof dish with non-stick spray or grease well. Mix the honey, water and cinnamon in a small saucepan and bring to the boil. Add the butter and stir until melted. Set aside. Sift the flour and icing sugar together and rub in the butter. Add the iced water and cut in with a knife until a soft dough is formed. Shape into a ball and roll out into a rectangle on a floured surface. Brush lightly with melted butter. Mix all the ingredients for the filling and spread evenly over the dough rectangle. Roll up the dough (as for a Swiss roll) and cut into 2,5 cm thick slices. Place the dough rounds in the prepared dish and pour over the syrup. Bake for about 40 minutes until the dough is golden brown and the fruit is tender. Serve hot with fresh cream or ice cream.
