Roasted fruit salad

  • 4 pears, unpeeled, cut into quarters
  • 4 apples, unpeeled, cut into quarters
  • 4 bananas, cut into big chunks
  • 2 pineapples, sliced and cut into quarters
  • 2 punnets strawberries, cleaned, hulled and whole
  • 250 ml dried apricots
  • 4 oranges, cut into segments
  • 250 ml fresh orange juice
  • grated rind of 1 orange
  • 15-30 ml sugar
  • 190 ml apricot jam


Preheat the grill.
Place all cut-up fruit except bananas and strawberries in a roasting pan, with 1/2 cup orange juice, orange rind and sugar.
Grill fruit on bottom rack of oven for 20 minutes.
Shake pan gently and add bananas and strawberries.
Add more orange juice, if necessary, as fruit will make its own juice.
Return roasting pan to oven for 15 minutes more.
Just before serving, stir in jam and place back under the grill to heat through.
Be careful, as the fruit will burn because of the added jam, so don't place too close to the grill.
Serve warm or at room temperature with ice cream or custard.
