Roast vegetable lasagne

  • 500
    g
    courgettes
  • 250
    g
    carrots
  • one onion
  • one red and yellow pepper
  • 30
    ml
    olive oil
  • 500
    ml
    ready cheese sauce
  • ready pasta sauce
  • lasagne sheets
 

Method

1 Slice all the vegetables into chunks, toss them in the olive oil, season to taste and roast in a preheated oven for 30 minutes.
2 Pour a quarter of the cheese sauce into an ovenproof dish. Cover with lasagne sheets.
3 Mix the vegetables with the pasta sauce. Layer half the vegetables over the lasagne sheets, then cover with more cheese sauce and another layer of lasagne sheets.
4 Top with the remaining vegetables
