Roast turkey breast wrapped in pancetta with bean salad

    slices pancetta
  • 1
    kg
    turkey breast
  • 15
    ml
    butter
  • 30
    ml
    olive oil, for roasting
  • salt and freshly ground black pepper
  • SALAD
  • 1
    x 400 g can butter beans
  • 250
    ml
    green olives
  • 0.50
    cucumber, sliced
  • 4
    ripe tomatoes, quartered
  • 1
    handful fresh Italian parsley, chopped
  • 30
    ml
    red wine vinegar
  • 4
    cloves garlic, chopped
  • 10
    ml
    wholegrain mustard
  • 30
    ml
    extra-virgin olive oil
  • salt and freshly ground black pepper
 

Method

45 minutes plus 5 minutes resting time
 
Preheat the oven to 180 °C.
Wrap pancetta around the turkey breast, covering the entire surface.
Place on a roasting rack in a roasting tray, dot with butter and pour over olive oil. Season.
Place in the oven and roast for about 45 minutes.
Remove and leave to rest for five minutes before slicing it.
SALAD: Combine all the ingredients.
