Roast pork with wild berry sauce

    pork fillet

    garlic cloves, chopped

    wholegrain mustard
  • 100

    olive oil
  • salt and milled black pepper
  • SAUCE
  • 400
    g
    youngberries or loganberries
  • 75
    ml
    malt vinegar
  • 50
    g
    dark brown sugar
  • 2
    ml
    ground cinnamon
  • 125
    ml
    port
  • 20
    ml
    cornflour
  • 60
    ml
    water
 

Method

 
Preheat oven to 200 ºC. Place fillet in a roasting pan. Rub with garlic, mustard, olive oil and seasoning. Roast for 20 minutes, or until done to taste. Carve and serve with sauce and baby marrows. SAUCE: Place all ingredients except cornflour and water in a saucepan. Simmer until fruit has softened and liquid has reduced slightly. Mix comflour to a paste with water. Stir into berry mixture and boil for about 2 minutes, or until thickened and clear.
