Roast chilli chicken

    kg
    chicken
  • SAUCE
  • 4
    each red and green chillies, seeded and sliced
  • 250
    ml
    readymade arriabata sauce (from delis)
  • 4
    limes, juice
  • 30
    ml
    cumin seeds
  • 4
    garlic cloves, crushed
  • 30
    ml
    olive oil
 

Method

 
Place sauce ingredients in a large bowl and mix well. Place chicken in bowl, cover with sauce, cover and marinate in refrigerator overnight. Preheat oven to 180 ºC. Place chicken in a roasting pan and pour sauce over. Roast for 1 hour or until juices run clear when chicken's pierced with a skewer. Baste from time to time. Cool before serving.
