Roast baby chickens

    baby chickens
  • 250
    ml
    chicken stock
  • 180
    ml
    dry white wine
  • 3
    cloves garlic, crushed
  • 500
    g
    baby potatoes
  • 45
    ml
    chopped parsley
  • 30
    ml
    butter
 

Method

1. Pre-heat oven to 180°C. Arrange chickens in a roasting dish, breast-side down. Mix together the stock, wine and garlic, pour over chickens and roast for 20 minutes.
2. Meanwhile, wash baby potatoes, sprinkle with parsley and dot with butter.
3. Strain stock from chickens, add potatoes and return to oven for 15 minutes, until chickens are browned and potatoes cooked through.
4. Serve with a green salad.
