Roast asparagus and beef wraps

500.00 g beef — fillet, well-aged
2.00 garlic — cloves, crushed
1.00 lemon — juice only
0.00 ml olive oil — extra virgin
freshly ground black pepper
200.00 g asparagus

Method:

Using a very sharp knife, slice fillet into centimetre-thick slices or ask your butcher to do it for you. Place beef slices in a shallow dish.
Mix garlic, lemon juice, extra-virgin olive oil and pepper together and pour over meat. Leave to marinate for about 30 minutes.
Place asparagus on a baking sheet, drizzle with olive oil and season with salt and pepper. Roast in a preheated oven at 180 ºC for about 15 minutes if thin, and 25 minutes if thick.
Allow asparagus to cool slightly, then wrap in marinated beef. Serve as a pre-dinner snack.
