Riso with avocado and feta

    avocado pears, chopped
  • 150
    g
    feta cheese, crumbled
  • 60
    ml
    parsley, chopped
  • 300
    g
    pasta rice, cooked al dente
  • salt
  • freshly ground black pepper
  • 2
    red sweet peppers, sliced and roasted
  • olive oil for drizzling
 

Method

 
Place avocado, cheese, parsley and pasta rice in a large bowl and mix well. Spoon into four bowls or place on a large platter. Season, garnish with roasted peppers and drizzle with olive oil. Serves 4.
