Rice dish

    uncooked rice
  • 1
    green pepper, seeded and diced
  • 1
    red or yellow pepper, seeded and diced
  • oil

    milk
  • 3
    extra-large eggs
  • 15

    finely chopped parsley
  • 2
    ml
    mixed herbs
  • 2
    ml
    ground coriander
  • salt and pepper to taste
  • 50

    Cheddar cheese, grated
 

Method

30-45 min
 
Preheat the oven to 180 ºC (350 ºF). Spray non-stick spray in a 24 cm ovenproof dish or saucepan with handles that fits into the oven. Boil the rice in sufficient salted water till soft. Drain well and turn into the bottom of the prepared ovenproof dish. Sauté the diced peppers in a little oil till soft. Spoon on top of the rice. Mix the remaining ingredients and beat well. Pour over the rice and peppers and bake for 30-45 minutes or till the mixture has set and is done. Serve with fried tomato, if desired. Serves 6.
