    cake flour
  • 20

    baking powder
  • pinch salt

    extra-large egg, whisked
  • 350
    ml
    milk
  • 25
    ml
    grated Cheddar cheese
  • 5
    ml
    any fresh herbs
  • 5
    ml
    crushed garlic
 

Method

 
Sift the cake flour, baking powder and salt together. Add the egg and small quantities of the milk while stirring continuously until a stiff batter is formed. Divide the mixture into three equal parts and add the cheese to one part, herbs to the second and garlic to the third. Heat a Bauer or heavy-based pan, lightly brushed with oil, and drop spoonfuls of the mixture into the pan. Fry until golden brown on the outside and cooked inside. Serve hot with butter. Makes 9 rekkenbekke.
