raw mushroom soup

  • 3
    cup
    shiitake mushrooms - thinly sliced
  • 1/4
    cup
    tamari
  • 1/2
    cup
    olive oil
  • 1
    large avocado
  • 2
    cup
    hot water
  • 1
    cup
    parsley
 

Method

Toss the mushrooms in a bowl with the olive oil and tamari and let it stand for about an hour, turning it over every now and again.

Blend the avocado and hot water together until smooth. Add the parsley and mushroom mix, with all the oil and tamari, into the blender and pulse just once or twice.

Note: Use portabellini mushrooms if you can’t find shiitakes.
