    self-raising flour

    mixed spice

    light brown sugar

    coconut
  • 250

    fruitcake mix (we used the kind with syrup)
  • 50

    pecan nuts, chopped
  • 2
    eggs
  • 5
    ml
    vanilla essence
  • 125
    ml
    butter
  • 100
    ml
    oil
  • 15
    ml
    cocoa
 

Method

20-30 min
 
Preheat the oven to 180 ºC (350 ºF). Grease a 23 x 32 cm baking sheet with margarine. Sift the dry ingredients together. Add the brown sugar, coconut, fruitcake mix and pecan nuts and mix well. Beat the eggs and vanilla essence together and add to the dry ingredients. Mix. Melt the butter, oil and cocoa together. Add to the mixture and blend. Spoon the mixture into the baking tray, pressing it down firmly. Bake for 20-30 minutes or until a testing skewer comes out clean when inserted into the centre of the cake. Cool in the baking tray before cutting into fairly large squares or bars. Makes 36 medium-sized squares.
