Pumpkin fritters with skilpadjies

    flour

    ml
    salt
  • milled black pepper to taste

    baking powder
  • 1
    egg, beaten
  • 15

    oil
  • 45
    ml
    milk
  • oil for shallow-frying
  • cinnamon sugar
  • 8
    skilpadjies
 

Method

 
Purée pumpkin in a food processor. In a large bowl, sift flour, seasoning and baking powder. Beat egg, oil, milk and pumpkin together and stir into dry ingredients to form a batter. Shallow-fry spoonfuls of batter in a pan on both sides until golden brown. Drain fritters on paper towels, sprinkle with cinnamon sugar and serve hot with skilpadjies, fried bacon and onion. Serves 4.
