Prawn bagel

    large prawns
  • 30
    ml
    olive oil
  • 30
    ml
    spring onions, chopped
  • 5
    ml
    turmeric
  • 5
    ml
    chilli powder
  • 3
    cloves garlic, crushed
  • butter for frying
  • 250
    g
    cream cheese
  • 10
    ml
    fresh coriander, coarsely chopped
  • 0.50
    lemon, zest and juice
  • 4
    bagels
 

Method

Peel and devein the prawns.
Mix together the olive oil, spring onions, turmeric, chilli powder and garlic.
Add the prawns and allow to stand for three hours.
Heat a little butter in a frying pan and quickly stir-fry the prawns over a high heat.
Allow to cool slightly.
To serve, mix together the cream cheese, coriander, lemon juice and zest, and season to taste with salt and freshly ground black pepper.
Spread the cream cheese mixture on the bagels, top with prawns and serve immediately.
