  • 200
    g
    whole almonds, peeled
  • 200
    g
    sugar
  • 40
    ml
    brandy
 

Method

 
1. Spread almonds in a roasting pan and roast at 180 ºC until light brown. 2. Mix sugar and water and stir over low heat until all the sugar has dissolved. Increase heat and allow to boil until light brown. Add almonds and let the mixture caramelise to a golden brown colour. Turn out onto an oiled surface and leave to cool. Scrape off and process in a food processor until fine.
