    whole duck
  • salt and pepper


Prick the breast all over, then rub with salt and pepper. Place, breast-side down, on a rack in a roasting tin. Roast at 200 ºC for 25 minutes. Turn breast-side up and roast for 20 minutes. Baste, then pour off excess fat. Reduce temperature to 180 ºC to finish roasting for 1-1 1/2 hours.
