Potato salad with olives, gherkins and egg

    kg
    baby potatoes, scrubbed and halved
  • 45
    ml
    olive oil
  • 15
    ml
    white wine vinegar
  • 5
    ml
    wholegrain mustard
  • salt and freshly ground black pepper
  • 30
    ml
    olive oil
  • 6
    chives, chopped
  • 150
    ml
    gherkins, chopped
  • 75
    g
    olives
  • 6
    hard-boiled eggs
 

Method

 
Boil the potatoes until done.
Meanwhile make a dressing by beating together the 45 ml olive oil, vinegar and mustard and season with salt and freshly ground black pepper.
Drain the potatoes once soft, add the 30 ml olive oil and season with salt and pepper.
Break the potatoes into pieces with a fork.
Add the chives, gherkins and olives and mix.
Shell the eggs, cut into wedges and add to the salad.
Moisten the salad with the dressing and mix lightly.
